Tom Yum Soup

Description

Hot, sour, and incredibly flavorful! This iconic Thai soup will clear your sinuses and warm you up. Perfect for cold winter nights!

Ingredients

  • 6 cups chicken or vegetable broth
  • 2-3 stalks lemongrass, cut into 2-inch pieces and smashed
  • 4-5 kaffir lime leaves (or zest of 1 lime)
  • 3-4 Thai chilies, smashed
  • 1-inch galangal or ginger, sliced
  • 8 oz shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 2 tomatoes, quartered
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon Thai chili paste (nam prik pao)
  • Cilantro for garnish
  • Green onions for garnish

Instructions

  1. Bring broth to a boil. Add lemongrass, lime leaves, chilies, and galangal. Simmer for 5 minutes to infuse flavors.
  2. Add mushrooms and tomatoes. Cook for 3 minutes.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Remove from heat. Stir in fish sauce, lime juice, and chili paste.
  5. Taste and adjust: should be hot, sour, salty, and savory!
  6. Remove lemongrass stalks before serving (or warn people not to eat them!).
  7. Garnish with cilantro and green onions.
  8. Serve immediately while piping hot!

Lemongrass Hack: Can't find fresh? Use 1 tablespoon lemongrass paste from a tube.

Seafood Options: Try with squid, fish, or mixed seafood instead of shrimp!

Spice Control: Too spicy? Add coconut milk for creamy tom yum (tom yum goong)!
