Shrimp Tacos

Description

Light, fresh, and perfect for summer! These shrimp tacos are loaded with crunchy slaw and creamy sauce. Great for Taco Tuesday!

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper
  • 8 small corn or flour tortillas
  • FOR SLAW:
  • 2 cups shredded cabbage
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • FOR CREMA:
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • 1 clove garlic, minced
  • Pinch of salt

Instructions

  1. Make crema: Mix sour cream, lime juice, garlic, and salt. Set aside.
  2. Make slaw: Toss cabbage with cilantro and lime juice. Season with salt.
  3. Season shrimp with olive oil, chili powder, cumin, paprika, salt, and pepper.
  4. Heat a large skillet over high heat. Cook shrimp for 2-3 minutes per side until pink and opaque.
  5. Warm tortillas in a dry pan or directly over a gas flame for char marks.
  6. Assemble tacos: Tortilla, slaw, shrimp, drizzle of crema.
  7. Serve with lime wedges and hot sauce!

💡 Student Tips

Shrimp Size: Large shrimp (16-20 count) work best - cook evenly and look impressive!

Frozen is Fine: Frozen shrimp are flash-frozen on the boat - often fresher than 'fresh' at the store!

Meal Prep: Make slaw and crema ahead. Cook shrimp fresh - takes only 5 minutes!
