Description

The most popular Indian dish in the world! Marinated chicken in a rich, creamy tomato sauce. Worth every minute of the hour it takes!

Ingredients

  • FOR CHICKEN:
  • 1.5 lbs chicken thighs, cubed
  • 1 cup yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • FOR SAUCE:
  • 2 tablespoons butter
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (14oz) tomato sauce
  • 1 cup heavy cream
  • Salt to taste
  • Cilantro for garnish
  • Basmati rice or naan for serving

Instructions

  1. Marinate chicken: Mix yogurt, lemon juice, and spices. Add chicken, coat well, refrigerate for at least 30 minutes (or overnight!).
  2. Cook chicken: Heat oil in a large pan. Cook marinated chicken until browned and cooked through, about 8-10 minutes. Set aside.
  3. Make sauce: In same pan, melt butter. Sauté onion until softened, about 5 minutes.
  4. Add garlic and ginger, cook for 1 minute until fragrant.
  5. Add spices (garam masala, cumin, paprika) and toast for 30 seconds.
  6. Pour in tomato sauce. Simmer for 10 minutes, stirring occasionally.
  7. Add cream and return chicken to the pan. Simmer for 5 more minutes.
  8. Season with salt. Garnish with cilantro.
  9. Serve over rice or with naan bread for scooping!

💡 Student Tips

Marinate Longer: Overnight marination = incredible flavor. Plan ahead!

Cream Alternative: Use coconut milk instead of heavy cream for dairy-free version.

Freeze It: This freezes beautifully! Make double batch and freeze half for later.
