Ingredients
- FOR CHICKEN:
- 1.5 lbs chicken thighs, cubed
- 1 cup yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- FOR SAUCE:
- 2 tablespoons butter
- 1 onion, diced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (14oz) tomato sauce
- 1 cup heavy cream
- Salt to taste
- Cilantro for garnish
- Basmati rice or naan for serving
Instructions
- Marinate chicken: Mix yogurt, lemon juice, and spices. Add chicken, coat well, refrigerate for at least 30 minutes (or overnight!).
- Cook chicken: Heat oil in a large pan. Cook marinated chicken until browned and cooked through, about 8-10 minutes. Set aside.
- Make sauce: In same pan, melt butter. Sauté onion until softened, about 5 minutes.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Add spices (garam masala, cumin, paprika) and toast for 30 seconds.
- Pour in tomato sauce. Simmer for 10 minutes, stirring occasionally.
- Add cream and return chicken to the pan. Simmer for 5 more minutes.
- Season with salt. Garnish with cilantro.
- Serve over rice or with naan bread for scooping!
