Ingredients

  • 6 cups chicken or beef broth
  • 2 star anise
  • 1 cinnamon stick
  • 1-inch ginger, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 8 oz rice noodles (bánh phở)
  • Protein: sliced beef, chicken, or tofu
  • Fresh herbs: Thai basil, cilantro, mint
  • Bean sprouts
  • Lime wedges
  • Sriracha and hoisin sauce

Instructions

  1. Bring broth to a boil with star anise, cinnamon stick, and ginger. Simmer for 10 minutes to infuse flavors.
  2. Add fish sauce and brown sugar. Taste and adjust - it should be savory and slightly sweet.
  3. Cook rice noodles according to package (usually 5-7 minutes in boiling water). Drain.
  4. If using beef, slice very thin. If using chicken, cook it in the broth for 10 minutes.
  5. Divide noodles between bowls. Add protein.
  6. Strain the hot broth and pour over noodles and protein. The heat will cook thin beef slices.
  7. Top with fresh herbs, bean sprouts, and serve with lime wedges and sauces on the side.
  8. Squeeze lime and add sriracha/hoisin to taste!
