Ingredients
- 2 cups cooked rice (short grain is best)
- 2 eggs
- 8 oz protein (ground beef, tofu, or chicken)
- 1 cup spinach
- 1 cup bean sprouts
- 1 carrot, julienned
- 1 zucchini, julienned
- 2 cloves garlic, minced
- Sesame oil
- Soy sauce
- FOR GOCHUJANG SAUCE:
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 tablespoon water
- 1 teaspoon rice vinegar
- Sesame seeds for garnish
Instructions
- Make gochujang sauce: Mix all sauce ingredients until smooth. Set aside.
- Season protein: If using ground beef, cook with garlic, soy sauce, and sesame oil until browned. Set aside.
- Prepare vegetables (season each separately for authentic flavor):
- Spinach: Blanch in boiling water for 1 minute, squeeze dry, season with sesame oil and salt.
- Bean sprouts: Blanch for 2 minutes, drain, season with sesame oil and salt.
- Carrot: Sauté in a bit of oil until softened, season with salt.
- Zucchini: Sauté until softened, season with salt and garlic.
- Fry eggs sunny-side up with runny yolks.
- Assemble: Place rice in bowls. Arrange vegetables and protein in sections on top. Add fried egg in center.
- Serve with gochujang sauce. Mix everything together before eating!
